'COZZI GRATINATI' The Mussels Gratin are a tasty seafood starter, very common in Sicily. You can find several versions of this recipe, mainly in the South of Italy. We here present to the most common Sicilian recipe of Mussels Gratin. Enjoy!
1 kg of mussels; 100 g of bread crumbs; 50 g of sheep's milk cheese (pecorino); 1 bunch of fresh parsley; 2 cloves of garlic; 3 spoons of extra virgin olive oil; salt and pepper.
Carefully brush and wash the mussels; place them in a pan, cook on a high flame, with a cover, to let them open.
Remove the ones which remained closed and remove half shell (the empty one) from the opened ones.
Slightly toast the bread crumbs with a little bit of oil, move it into a bowl and add 1 crushed garlic, the parsley, the pecorino cheese, a pinch of salt and an abundant sprinkle of black pepper.
Mix all the ingredients and distribute the mixture on the shells, to cover the shellfish.
Place the mussels in an oven dish, sprinkle the remaining oil over them, and bake at 180° for 10 minutes.
