ARANCINO BIANCO MACERATO TERRE SICILIANE IGP 2021 - SICILY/WHITE CL 75

A macerated white wine made from Catarratto, Zibibbo and Grillo grapes from various vineyards, some in the Monreale area (inland area) and others from Alcamo (area by the sea). The soils are predominantly clayey, sandy and stony. Spontaneous fermentation with indigenous yeasts in steel, with maceration on the skins for 20 days. Maturation in steel for 7 months. In this perfect mix of grapes, Catarratto gives the wine the acidic 'shoulder' (which Zibibbo lacks), Grillo the structure (which proves useful in binding the two extreme components of the other two grapes) and Zibibbo the aromatic part; the maceration of the skins perfectly integrates these peculiarities.
