'PASTA WITH FRESH RICOTTA CHEESE AND PISTACHIOS' Very easy pasta recipe, with a delicate taste. Delicious if made with not industrial fresh ricotta cheese and quality pistachios, as the ones from Bronte, Sicily. Enjoy!
400 g of maccheroni (or a similar pasta type); 500 g of fresh ricotta cheese; 100 g of unshelled pistachios; salt and pepper.
Boil abundant water in a pan and cook pasta.
In the meantime, sift the ricotta cheese in a bowl and add a couple of spoons of cooking water to soften it. Ground the pistachios.
Drain the pasta 'al dente' and pour it in the bowl, mixing it with the ricotta cheese.
Add the ground pistachios and an abundant sprinkle of pepper and serve.
Wine pairings: a fresh white wine, as a Sicilian Grillo.
