The Saffron Cheese is produced with ewe whole milk and is still made by using traditional techniques and ancient tools.

Taste, Use tips and Wines: The Saffron Cheese has a typical aromatic and sweetish taste. It may be eaten with fresh brad beans, peperonata and caponata; as dessert, it is excellent served with honey or sweet fruit or nuts, if aged it is excellent grated on typical dishes. It may be tasted along with fruity wines with an intense smell.
