The Baked Ricotta Cheese is a typical Sicilian product mainly used in Messina and Catania Provinces. Its preparation follows the ancient techniques of ageing and baking of fresh ricotta cheese.

Taste and Serving Tips: This tasty ricotta cheese is ideal for grating over pasta; it is a very important ingredient of Sicilian Pasta alla Norma (with tomato sauce, aubergines, baked hard ricotta cheese and basil) or Pizza alla Norma. It is ideal also grated over pasta dishes with red meat sauces. It is excellent also as a table cheese (when not too aged) and to enrich an original starter dish. Very good when combined with a glass of Passito wine or with full-bodied red wines.

Every ricotta cheese is baked at a temperature of 130°-140° degrees for 2-3 hours and for 3-4 days. Appearance: The baked ricotta cheese has a typical amber colour due to the oven baking process.
