The Young Cheese with red pepper is a soft-textured cheese made from ewe milk. This cheese has been salted only once, hence the name 'Primo Sale'.

Smashed red pepper is added when separating the whey and the cheese is salted only once, hence its name 'Primo sale'. Ageing: 20 days minimum. Appearance: Shape: drum-shaped (diameter 23-26 cm height 17-21 cm)     Rind: thin, pale yellow in colour Texture: firm ivory yellow in colour with red spots due to the red pepper  Average nutrition facts: fat (%) 32.19 – salt (%) 2.92 – Kcalories/100 gr 400.3.
